I read with interest the article about the top London chef visiting ST Omer.
Having been trained as a chef in the ACC back in the 70,s ,
I found it very amusing.
We had at the time Instructors such as Mister Roberts,Owens,Wade, Frost, S/sgt Dodds etc-----,who
would have wiped the floor with this Meister koch from Germany.

I have spent the last 25 years of my life working in Germany as a chef so I know what I"m speaking about.
In most of the hotels I have worked in ,there has been French, German,or Swiss pastry chefs.
Have a guess who had to make the CREME BAVAROIS  and have a guess who taught me.!!
S/SGT DODDS ACC, ST OMER BARRACKS ,Aldershot.
WE WERE THE BEST!!!

Yeah I have to agree with you, I had already posted my comments on S/Sgt Dodds he was the best instructor I ever had, there is no doubt in my mind the Loss of St Omer has had a far reaching effect on the catering industry. Its really difficult trying to recruit a half decent chef these days.  Angry

And welcome to the site as well. We were at St.Omer about the same time I think 70 to 72
